"Perfectly Chocolate" Chocolate Layer Cake

Today, we wanted to make a chocolate cake.  It is one of those desserts So-Yeoun
had tasted and wanted to learn how to make.  I grew up in the 1950's, and so, the first
cake that came to mind was Hershey's Chocolate Cake.  Mom made that cake for years, and I wanted to share this classic cake.  It is very easy to make, even though it is made from scratch.  After searching on line,
I found the "Perfectly Chocolate" Chocolate Cake from the Hershey's web sight.  It brings back fond memories from the past when Hershey's Chocolate Cake was THE cake to make.  I hope you enjoy making this cake as much as you will enjoy eating it. It is delicious!




Ingredients:
  • 2 cups sugar
  • 1 3/4 cups all-purpose flour
  • 3/4 cup cocoa
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 eggs
  • 1 cup milk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla
  • 1 cup boiling water


Assemble ingredients.

Measure 2 cups granulated sugar.
Level with flat side of knife for accuracy.
Put into large mixer bowl.

Measure 3/4 cup Hershey's baking cocoa
and add to bowl.

Measure 1 3/4 cups all-purpose flour.
Add to other ingredients in mixing bowl.

Measure & add  1 1/2 level teaspoons baking powder.

Add 1 1/2 level teaspoons baking soda.

Add 1 teaspoon salt.

Stir the dry ingredients together with a whisk.

Add two eggs to the bowl of dry ingredients.
We cracked open a double-yolk egg.
It is a sign of good luck and prosperity!

Measure & add 1 cup milk.

Add 1/2 cup vegetable oil.

Add 2 teaspoons vanilla extract.

Beat on medium speed with electric mixer for 2 minutes.

Boil 1 cup of water on stove top.

Measure and add 1 cup boiling water to mixture.

Stir in water with spoon or spatula.

Mixture will be thin.

Prepare 2- 9 inch round baking pans with
non-stick vegetable cooking spray.

Pour batter evenly into prepared pans.

Bake 30 to 35 minutes in a preheated 350 degree oven.

Cake is done when a wooden toothpick
inserted in center comes out clean.

Cool completely on wire rack .

When cool,  remove from pan.
Run knife around edge of pan to loosen.

Place plate on top of pan.

Invert pan.

Carefully lift off baking pan.

Remove both cakes from baking pans.

Spread frosting on top of first layer.
We used a tub of prepared chocolate frosting.

Spread evenly over top of cake.
This is the layer of frosting between the 2 layers.

Place second cake layer on top of the first layer.

Be careful not to break it.

Center it.

Frost the top layer.

Continue to spread frosting along the sides of the cake.

Place on cake pedestal.

Cut the cake & serve.

Enjoy!
