More of Sunday's Adventures-On to Betty's Pies & Split Rock Lighthouse

Betty's Pies
# 1 seller
5 Layer Chocolate

I can't wait to try a slice of Betty's Pie.

We have arrived at Two Harbors.

Fun menu!

This rainbow looking out of the window at Betty's
is one of at least four we saw this evening.
I am always reminded of God's promise and faithfulness when I see a rainbow.

"I have set my rainbow in the clouds,
and it will be the sign of the covenant between me and the earth."
Genesis 9:13
New International Version

My Mom and her sisters baked some great pies, too.

I ordered the delicious fish tacos made of hand breaded fish filets,
mango salsa, and cilantro lime sour cream.

Doug had the fish platter.

We purchased a pie to go.
We could not hold another bite,
so we took Betty's number one seller with us.
That is the
  5 Layer Chocolate.
1) Pie crust 2) Meringue 3) Melted chocolate 4) Cinnamon whipped cream
5) Chocolate whipped cream

Here is a photo.
We did not cut into this beauty until Monday.

You have to make a trip North just for one of Betty's Pies.

It was even more delicious than these 5 layers of creamy goodness look.

The recipe for this pie can be found in
The Original Betty's Pies Favorite Recipes
by Betty Lessard.

If you can find her cookbook, by all means purchase one,
and bake your way through  her many recipes of
pies, cheesecake, cookies, bars, and breads.

We headed out again to explore
 Split Rock Light House.

We have arrived!

 Anchor of the Madeira

This anchor was salvaged from the shipwreck of the 5000-ton steel barge, Madeira, which was tossed up against Gold Rock Point, about a quarter mile northeast of here, during the fierce storm of November 27-28, 1905.
As the result of this storm the U.S. Congress funded the building of Split Rock Light Station. The lighthouse went into service on July 31, 1910 within a quarter mile of the Madeira shipwreck.

Split Rock Light House
operated from 1910 until 1969. The Split Rock Lighthouse is located in Two Harbors, Minnesota. The light house commands a panoramic view of Lake Superior from the 130 foot cliff from which it stands on. Built after a 1905 fierce storm that sank one ship nearby and more than 30 others on Lake Superior. Superior is the most unpredictable, deepest, and coldest of the Great Lakes.

Engineering
The construction of Split Rock Lighthouse was an engineering feat
in an organization already known for building structures in remote locations.

The first challenge in the spring of 1909 was erecting a steam-powered hoist and derrick for lifting supplies off the supply boats on the lake, more than 110 feet below. A construction crew of 35 to 50 men had to be supplied by boat through the entire construction period using this method. Three hundred ten tons of building materials were hoisted over the length of the construction period without a major accident.
