Apple Pie Baked in Apple for π Day!


I saw this cute apple pie recipe on Pinterest and wanted to make it because it is such a great idea and looks delicious.
And... today is π Day!
 3.14 (March 14) or Pie Day, (Apple that is!)
This blog is for all the number people in my life...
Evie, Alex, Andrea, Scott, and Sheldon Cooper.

This is a very basic recipe that will dazzle your guests and is just plain fun to try!

My recipe on my  Pinterest board. 
Cut off the tops of four apples and discard.  I used Granny Smith Apples. 
Remove the core of the apple.
I removed the remainder of the inside of the apples with a small melon baller.
Be careful not to puncture the peel.
I poured a little lemon juice into the inside so it it would not turn brown while I was
scooping out the apples.
 
In a separate bowl measure 1/4 cup sugar. 
Add 1 teaspoon cinnamon. 
Measure and add 1 Tablespoon brown sugar and mix the ingredients together. 
Pour 2 teaspoons lemon juice into a mixing bowl.
Peel 2 apples for the filling.
Dice the apples into small pieces.
Stir the cinnamon and sugar mixture and the apples together.
Mix until the apples are evenly coated.
Scoop the apple filling into the hollow apples.
Unroll a refrigerated pie crust and slice it into 1/4 inch strips.
Cover the top of the apple with the pie crust strips with a lattice pattern.
Place the apples in a baking dish.

Add just enough water to cover the bottom of the pan.
Cover with foil and bake for 20-25 minutes at 375 degrees.

Then, remove foil and bake for an additional 35 minutes or until crust is
golden brown and the apples are tender.
