Slow Cooker Apple Pie- A Day with Thomas the Train

We celebrated two birthdays on September 13th.  The actual birthdays, however, are in July and December.  We chose this day to celebrate because Thomas the Train was at the Boone Scenic Valley Railway making an appearance.  It was the perfect way to celebrate the birthdays of a 5 year old and a soon-to-be 3 year old.  The day was picture perfect as you will see from the photos.

Aiden and Camden ready for their adventure with Thomas the Train.

 All Aboard!

Thomas the Train, the main figure of Thomas the Tank Engine, began its story sixty years ago, thanks to Anglican Reverend Wilbert Awdry. The clergyman included Thomas the Train as the main character in his stories that he wrote to entertain his son, who had just recovered from scarlet fever. At first, the son got as a Christmas gift a wooden train called Thomas, which lead to making up many stories about it. The stories' hero was a cheeky blue train with 6 wheels, which lived on the Sodor Railways, who always won competitions and got into funny situations. The reverend's wife insisted for the publication of the stories, along with the drawings of British steam locomotives with human faces and expressions.

Caramel Apple Nachos- Dane's Cooking Adventures

We made a trip in September to enjoy a long Labor Day weekend
and to celebrate Dane's 11th birthday as well as Evie's Thirty-Something birthday!

What a bunch of great kids!

We made a lot of memories, and of course, came up with a recipe that was
easy, nutritious, fun to make, and delicious!

Caramel
Apple
Nachos

These are good and good for you!

 Apple Nachos
4 of your favorite apples
1/4 cup of lemon juice
1 package of Kraft Caramels
2 Tablespoons of milk or cream
1/2 cup of mini chocolate chips
1/4 cup of chopped walnuts or pecans

Fill a medium sized bowl with water and stir in the lemon juice. Cut up apples and soak them in the lemon water for a few minutes. Make sure all the apple slices get wet as this will keep them from browning. Remove them from the water and arrange them in a nice way on a serving plate.

Place the caramel in a small microwaveable bowl and melt in the microwave for 30 second intervals. Stir in the cream. The caramel should run evenly off of a spoon. If it doesn’t, then heat in the microwave for 10 more seconds.

Drizzle the caramel over the apples. Sprinkle the chocolate chips and the chopped walnuts on top as well. Refrigerate until ready to serve.
This recipe can be found on Pinterest with many variations.  I modified my recipe from www.gfspartyplanning.com/apples-anytime

Dane is now 11 years old!

Fill a medium sized bowl with water, and squeeze juice of 1 lemon into the bowl.

Cut up the apples and soak them in the lemon water to keep them from turning brown.

Did you know?
If you can't brush your teeth after a meal, reach for a Granny Smith apple. Biting and chewing the tough, fibrous skin of the apple stimulates saliva production. The extreme tartness of Granny Smith apples aids in more salivation than a sweeter type of apple. High levels of saliva decrease bacteria in your mouth that attack teeth and cause cavities. Beautiful Granny Smith Apple.
Did you know that October is National Apple Month?
Granny Smith apples are a crisp, tart apple that make a delicious snack or a tasteful addition to recipes. Because these green apples are have a higher acid content than other apples, they take longer to go brown once you cut into them.

Unwrap a bag of Kraft Caramels and place in a bowl.

Add 2 Tbsp. cream or milk.

Remove the apples from the water and arrange in a pretty pattern in a dish.

Heat the caramel in a microwave in 30 second intervals
until the caramel runs evenly off the spoon.

Sprinkle 1/4 cup chopped walnuts over the apples while the caramel is warm.

Then, sprinkle 1/2 cup of chocolate chips over the apples.

Enjoy!

Next get ready to surprise Mom with a delicious dinner
and Caramel Apple Nachos!

 Surprise!

Slow Cooked Barbecued Country-Style Ribs

My niece, Becky, is on her way to another adventure.
She will soon start her internship to complete her program of study.
She stopped on Saturday for an overnight with Grandma
and a "congratulations lunch" on the farm.

Doug and I brought the Slow Cooked Barbecued Country-Style Ribs
and Doug's Famous Apple Dumplings.  His recipe can be found on this blog,
Mom requested them, and everyone reaped the rewards of Doug's labor.
We enjoyed visiting over good food and created more great family memories.

Slow Cooked Barbecued Country-Style Ribs
Ingredients:

3 to 4 pounds boneless pork country-style ribs
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1/4 cup light brown sugar, packed
2 cloves garlic, minced
1 large onion, halved, thinly sliced
1/2 cup apple juice
1 bottle (16 to 18 ounces) barbecue sauce, about 1 1/2 cups
Preparation:

Lightly grease the crockery insert of a 5 to 6-quart slow cooker. Wash pork, trim excess fat and pat dry with paper towels. Put the sliced onions in the bottom of the slow cooker, then place pork on top. Sprinkle the pork with salt and pepper, brown sugar, and minced garlic; turn the pork ribs to coat all pieces. Pour apple juice evenly over the pork. Cover and cook on LOW for 8 to 9 hours. Drain liquids from the pork. Pour barbecue sauce over the pork and stir slightly to distribute the sauce. Cover and cook on LOW for 1 hour longer.
Serves 6 to 8.
Taken from http://southernfood.about.com/od/crockpotporkandham/r/r80418g.htm

 Gather the ingredients.

 Lightly grease the crock pot.
Put sliced onions in the bottom of the cooker.
Place the pork on top that has been washed, trimmed, and patted dry.
Sprinkle the pork with seasonings, brown sugar, and garlic.
Turn to coat the pieces.
Pour apple juice over the pork.  The apple juice acts as a marinade and helps to keep
the pork moist and tender while cooking.

Cover and cook on LOW for 8 to 9 hours.
Drain liquids from the pork.
Pour barbecue sauce over the pork and stir to distribute the sauce.
Cover and cook on LOW for 1 hour longer.

Caramelized, flavorful, and tender.
